Hi guys, Happy weekend & Happy Easter to those celebrating Easter this weekend. Today I am sharing with you a pretty yummy yet healthy Chocolate Orange cake recipe that I really love. You won’t feel guilty eating this because this cake is quiet good for you 🙂 I love baking Birthday cakes for my family, so last August I asked my brother what type of Cake he wanted me to make for his birthday, and he said a healthy one. I asked him what ingredients he wanted, he said fruit so then I went online and did some research and found this delicious and simple recipe and then got his go ahead approval to make it.
Ingredients – For the Cake Base:
- 2 oranges
- 270g almonds
- 4 room temperature eggs
- 3/4 cup honey
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Ingredients – For the Cake Topping:
- 1 milk chocolate
- 1 dark chocolate
- some more almonds
Step 1: Cook 2 Oranges for 1.5 hours or until they are done
Step 2: Place whole cooked oranges (with peel) in a food processor and blend until smooth

Step 3: Put 270g of Almonds in a food processor and blitz them down
Step 4: In a bowl, mix 4 (room temperature) eggs, add 3/4 cup honey, add 1 teaspoon baking soda, 1/2 teaspoon salt, almond mixture & add orange mixture to that at the end. This is what it should look like

Step 5: Preheat oven to 180 C and grease your pan. Place the mixture inside and bake for 40-50 minutes depending on your oven
Step 6: Let the cake cool for an hour

Step 7: I melted milk & dark chocolate with ratio of about 70% milk & 30% dark & I added finely grated orange peel to the mix. I covered the cake with the chocolate mixture & added blitzed almonds on top. Ta-da!
Step 8: Place the cake in a fridge for a few hours & it will be amazing once chilled.
